When: Tuesday, September 27, 4 p.m. to 5:30 p.m.

Where: The Campus Garden is located just west of the Dolan School of Business, near the Round Hill Road gate.

Why: Enjoy a cooking demonstration using garden produce by Campus Executive Chef Nick Pawlowski. Music, refreshments and garden tours planned before and after the cooking demonstration.

"We are doing a cooking demo/tasting at the Stag Garden open house," said Pawlowski. "We will have hot mulled Connecticut cider and will be offering a whole wheat penne pasta with braised Swiss rainbow chard in a garlic/herb olive oil sauce. The chard, garlic and herbs were all grown in the garden."

Background: Ground was broken last year on the 3,000 square foot campus garden, which is tended to by faculty, students, and staff. Its origins can be traced to the university's Campus Sustainability Committee. The project is a collaborative effort to maintain a vegetable garden on campus with a focus on using sustainable practices. Goals include providing local, sustainably grown produce to the campus community and the Connecticut Food Bank; opportunities for the campus community to participate in the practice of growing food and engage with a community of people interested in the broader consequences of food production; and an outdoor laboratory for courses and faculty/student research collaborations.
